As predicted, the snow came. Actually, it’s coming and coming and coming some more.

So, in true east coast fashion, I am not leaving the house. Well, I do have to get Liam from preschool in a few hours. Is he too young to walk home?

There’s nothing better than a big bowl of soup or chili as it snows outside. I don’t think this changes no matter where you live. Cold snow equals a bowl of hot, liquidy goodness.

So, today’s menu: cheesy taco soup. But my stomach didn’t have a chat with my refrigerator before deciding on this. There was one problem. I had no ground beef! And I was definitely NOT going out in the snow with three kids to get it.

So I pulled my Instacart app up and ordered some along with a few other items. Ladies (gentlemen, readers of all ages), Instacart has been life changing. For $100 a year someone brings me my groceries in usually less than two hours!

When I found out about it this summer, TODAY is the reason I was willing to pay the $100. And I’d say I’ve already gotten my monies worth in just two months. There are a few downfalls but for me the pros faaaar outweigh them. Maybe I’ll do a blog about that sometime… Anyone interested?

So, who’s ready for a quick, easy recipe that still has me full three and a half hours after eating it?!

Let’s Get Cookin’

First, brown the meat. I’d say that’s super easy but I have burnt “browned meat” before. And don’t forget to remove it from the eye when it’s done!

While that’s going, melt the butter in a small saucepan and then whisk in the flour. The recipe said to cook for one minute but I don’t think I even got much over 30 seconds. And I was paying close attention because, well, I burn things.

Then stir in the milk, salt and pepper for a few minutes. And then the yummy, delicious, gooey cheese. I do love a recipe that is just “pour this, then this, then this”. It’s hard to mess up. But not impossible! Now, just leave the cheese sitting somewhere to wait for it’s next important job.

Now, back to the ground beef. Drain any excess fat (we’ve got to make this semi-healthy) and then it’s time to dump, dump, dump! Dump in the taco seasoning. Dump in the rotel. Dump in the black beans, milk and the gooey cheese sauce you just made.

And then stir!

Simmer it for about ten minutes and then you’re ready to eat!

I top mine with more cheese (you can’t have too much cheese in this family) and eat it with tortilla chips. Matt likes to eat his with a grilled cheese.

  1. I cant believe all the snow you have and I have my windows open to the cool 80 degree day. The taco soup sounds delicious and I love the pictures. I’ll have to try it this winter.
